This happens to be my five-year-old daughter’s favorite lunch. Which is pretty awesome, because it’s also a dietitian’s dream. Whole grains, healthy fats, protein, and veggies all in one place. For those with a more mature palette, the addition of red onion, and hot sauce may just blow your socks off.
Start out with a good hearty whole grain bread. We love this one from Dave’s Killer Bread. 100% organic whole wheat, along with 21 whole grains & seeds. Super squishy & delicious, with a whopping 5 grams of dietary fiber and protein per SLICE. Then find yourself some fresh mozzarella, a ripe avocado, and a flavorful tomato.
